An Epicurean Journey with The Laguna Resort & Spa, Bali

The Laguna, A Luxury Collection Resort and Spa is currently undergoing a transformational journey to create a timeless destination that resonates with the surrounding waters, nature and indigenous culture of Bali. Boasting seven lagoon pools, 287 guest rooms, suites and luxury villas, its own temple and award-winning restaurants and bars, the hotel sits in perfect harmony with the lush tropical gardens and pristine Nusa Dua beach. Helming the culinary team of The Laguna is Malaysian-born Chef Alexander Chong, Director of Culinary, an award-winning chef who has worked in prestigious hotels throughout Asia. With Asian contemporary cuisine in his heart, he draws from experiences new tastes, aromas, and techniques from his travels in several countries such as China, the Philippines, Vietnam, Singapore, and Malaysia. 

The newly designed Banyubiru restaurant has just been completed and provides the perfect backdrop for a serene experience. Its name, meaning blue water in the Javanese language, is drawn from the surrounding ocean. Two new refurbished are also planned for this year, including Kul Kul beach house and Arwana Restaurant. The New Kul Kul beach house is set to open in April 2023 offering a chic and laid-back vibe for adults only, with a new pool to be installed as the only pool on the beach in Bali. Guests can enjoy signature cocktails, wines, spirits, and light meals throughout the day with a variety of entertainment and upcoming events to look forward to.

Arwana Restaurant is already known for its unrivalled premium coastal cuisine, showcasing fresh seafood and signature dishes. Situated by the beachfront, the newly designed Arwana is now set to open in June 2023 as an Asian grill restaurant. Its design is inspired by a modern boathouse with nautical components and will include an open kitchen with basque grills, offering a unique beachfront experience.

Chef Alexander Chong has also recently introduced Yum Cha Chats Sunday Brunch*, a Cantonese tradition at Banyubiru Restaurant. Yum Cha, meaning “to drink tea” refers to a late morning meal eaten with friends and family. This important Cantonese family tradition has lasted many generations and is part of daily life and a way of spending leisure time. This Cantonese tradition of Yum Cha can be experienced at the newly designed Banyubiru Restaurant in both pass-around and buffet style. 

Situated off the lobby is De Bale Bar and Lounge, a theatrical and mystical cocktail bar inspired by centuries of oceanic spice trade. During the day, De Bale is a destination bar for fragrant spice infusions and light cocktails such as an original rendition of the local drink, Jamu. At night, expert bartenders skilfully mix inventive cocktails, paired with Balinese snacks. Located at the heart of the resort, this is an iconic part of the arrival experience, as well as a great place to relax for sundowners while watching Balinese performances.
